New Cookbook Emphasizes High-Fiber Diet to Help Control BGs
The American Diabetes Association recommends that people with diabetes incorporate 20 to 35 grams of dietary fiber into their diets on a daily basis in order to control their blood sugars. To help people with diabetes meet this goal, the Joslin Diabetes Center in Boston has published a new high-fiber cookbook entitled "The Joslin Diabetes Healthy Carbohydrate Cookbook."
According to Joslin, the recipes focus on a high-fiber, low-fat and vegetarian diet, with an emphasis on using fresh vegetables and ethnic dishes. The 175 easy-to-prepare recipes include three weeks of daily menus based on a 1,500-calorie diet. Additional tips and sidebars offer advice on such topics as low-fat cheese, cooking pasta, grain basics and more.
The authors also discuss carbohydrate counting, portion control and how to create a varied meal plan. The cookbook is the third written by co-authors Bonnie Sanders Polin, PhD, and Frances Towner Giedt.
"The Joslin Diabetes Healthy Carbohydrate Cookbook," published by Simon & Schuster, costs $15. For more information, contact the Joslin Diabetes Center by phone at (800) 344-4501 or log on to www.joslin.org.
