Cookbook Caters to Needs of Elders With Diabetes
Seniors with diabetes may need to make changes to their diet to remain healthy, according to the American Diabetes Association (ADA). In addition, people may have more difficulty preparing food as they get older.
To address these needs, Kathleen Stanley, CDE, CN, RD, LD, MSED, has published "Diabetic Cooking for Seniors," a cookbook that covers more than just recipes. The book addresses the challenges that elders in particular face, such as changing one's meal plan; eating less sodium, fat and cholesterol; eating at restaurants; understanding interactions between foods and medications; and handling problems with digestion, stress, boredom, decreased sense of taste and changes in weight.
"Diabetic Cooking for Seniors" includes easy-to-prepare recipes that are designed for small portions and that minimize chopping and preparation time without cutting back on taste. You can find recipes for Mediterranean orange chicken salad, oven stew, good fortune vegetable fried rice, spiced pear salad, apricot candy and more. Each recipe has exchange information.
The book also discusses preparing a grocery list, trying out sample menu ideas, and creating an emergency food shelf.
