Low Carb Vegetarian Diet Works for Australian Type 1 Family
I am writing to share my experience with a low carbohydrate diet tailored to meet our needs as vegetarians. We have two people with type 1 diabetes in our family, and we have been vegetarians for over fifteen years.
Animal rights is an issue close to my heart. I don't eat meat or fish. My husband eats fish occasionally, and we do consume free-range eggs, rennet-free cheese, cow's milk, and soya milk. To reduce carbohydrate intake, we avoid starchy foods like potatoes and pasta. We eat lots of green vegetables and foods rich in good fats, such as avocadoes, peanuts, and olive oil. Tofu and beans are important ingredients in our cooking because they are good sources of protein and very satisfying.
We have found that this low-carb vegetarian combination of foods is very helpful in our diabetes control and management. Over the years it has improved our health and helped us lose excess weight.

Iam very interested in any books or receipes that you may have used, I eat just about the same as you and some fish. I tried to followed dr. neil bernard reversing diabetes, A big advocate of animal crulty. but I think I eat to many starcy veggies

To anonymous8888, it sounds like you could use support from your diabetes care team. If you don't currently feel like you're getting it (and it sounds like you may not be) then get a NEW team. A good nurse (diabetes educator) and a nutritionist will be able to help you begin to come to terms with the often confusing reality of Type 1 and blood sugar fluctuations. Over time you will begin to understand how your body reacts and begin to see patterns. It ain't easy, but it will get easier.
