Nadia Al-Samarrie
Celebrity chef Paula Deen was subjected to some withering criticism recently when the public learned that she has type 2 diabetes. How could she push butter and sugar-loaded recipes at TV viewers when she has diabetes, her critics demanded.
In Paula's defense, some of her reluctance to change her recipes or acknowledge her diabetes was simple fear that she would have to surrender cooking and eating her beloved Southern food.
It was quite a storm, but Paula weathered it well. In doing so, she has come to a better accommodation of her disease and fashioned a positive response to both critics and fans.
She sat down with me recently to discuss the changes in her life. Come see what's up with Paula in "Cooking Up a New Life With Diabetes," on page 27.
CRAVING CARBS?
Why do we crave carbohydrates? To answer that question, we asked one of this country's leading experts on carbs and carb intake, Dr. Richard Bernstein. Bernstein, who was diagnosed with type 1 decades ago as a young man, has spent years studying the relationship between diabetes and carbohydrates. In my interview with him on page 20, he reveals that the craving for carbs has nothing to do with a lack of discipline or effort.
TYPE 1 DR. NAT STRAND WINS!
"The Amazing Race" is a TV show that has grown a dedicated, enthusiastic fan base over the years. There's something compelling about watching pairs of contestants race one another around the world in balloons, dune buggies, planes, and trucks, and on camels and horses, and behind sled dogs. Sounds pretty frantic, doesn't it? But what's it like to do all that racing with type 1 diabetes, and win? I find out what that's like in my interview with Season 17 winner Nat Strand, "An Amazing Race Winner Connects With the Diabetes Community," on page 8.
COACH SCOTTY
Life Coach Scott King returns this issue with advice on seven ways we can subvert ourselves when it comes to diabetes self-care. In "Miserable? 7 Behaviors You Need to Stop" (page 16), he not only identifies self-defeating behaviors but offers practical advice for stopping them.
ALTERNATIVE HOLIDAY RECIPE
One more food item: Look on page 18 for our "Turkey Sausage Chili with Garlic & Cilantro" recipe, one that we think you'll come back to time again as winter closes in. Lots of protein, lots of taste, and a low-enough carb count to keep you feeling guilt-free. Not a bad bargain!
