Fresh Tomato and Basil Pasta

Cook Time: 5 minutes



box Dreamfields Angel Hair


tablespoons olive oil


cups coarsely chopped tomatoes (see note below)


cup chopped fresh basil


cloves garlic, minced




Coarsely ground black pepper


Shredded Parmesan cheese (optional)


  1. Cook pasta according to package directions. Drain; return to pan. Toss with 1 tablespoon oil.


  1. Meanwhile, in large bowl, toss together tomatoes, basil, garlic and remaining 1 tablespoon oil. Add salt and pepper, as desired. Arrange pasta on platter; top with tomato mixture. Sprinkle with Parmesan cheese, if desired.


Makes 6 to 8 servings.


Note: Use fresh, firm, ripe tomatoes. Could include heirlooms, grape, cherry, etc.


Nutrition information (1/6 of recipe):  281 calories; 9 g protein; 12 g digestible carbohydrates*;

6 g total fat; 1 g saturated fat; 0 mg cholesterol; 22 mg sodium; 8 g total dietary fiber.
